This recipe is exactly the same as the 23. Roasted Cheesy Potatoes but this one has Sweet potatoes instead, and no cheese. You could add cheese if you wanted to.
| INGREDIENTS | QUANTITY |
| Sweet Potatoes (large) | Cubes, cut medium size (chunky!) |
| Coriander powder | 1-2 table spoons |
| Turmeric | 1 tablespoon |
| Hing/Asafoetida | 1 tablespoon |
| Any spice/curry powder mix* (biriyani/sambhar/pav bhaji/chole) | 2 tablespoons |
| Salt | 1 tablespoon |
| Cumin powder | 1-2 tablespoon |
| Olive oil | 2 tablespoons |
| Lemon juice | 2-3 tablespoons |
*Your local south asian grocery store will have the spiced powder mix. Any brand will do.
STEPS
- Preheat the oven to 250c on the grill setting.
- Cut the sweet potatoes into chunky cubes.
- Add all ingredients to the potatoes (except the lemon juice), and give it a very good mix.
- Lay out the spiced cubes in a baking/grilling tray. Lay a baking paper first if you are using a pizza tray with holes.
- Grill for about 25 minutes until the potatoes look dark.
- Turn off the grill, take the tray out, and pour/squeeze the lemon juice over it.
- Serve and enjoy!

I like it a bit WELL-ROASTED, with almost a charred outer texture. It’s not really the sweet potatoes but the spice mix.
