23. Roasted Cheesy Potatoes

First up – sorry! I didn’t take any photos of the ingredients and the preparations 🙁 I was in a hurry to make it as I had to rush out the door for an appointment. Luckily, this recipe is easy to make so you may not need many photos after all!

INGREDIENTSQUANTITY
Potatoes (large)Cubes, medium size, 2 cups
Cheddar cheeseA cup
Turmeric1 tablespoon
Hing/Asafoetida1 tablespoon
Biriyani powder2 tablespoons
Salt1 tablespoon
Sugar1 tablespoon
Olive oil2 tablespoons
Lemon juice2-3 tablespoons

Your local south asian grocery store will have the biriyani powder. Any brand will do. I used the below one today:

STEPS

  1. Preheat the oven to 250c on the grill setting.
  2. Peel the potatoes, and cut them into chunky cubes.
  3. Except for the cheese, add all other ingredients to the potatoes, and give it a very good mix.
  4. Lay out the spiced potato cubes in a baking/grilling tray. Lay a baking paper first if you are using a pizza tray with holes.
  5. Grill for about 25 minutes until the potatoes look dark.
  6. Then, top the potatoes with the cheddar cheese.
  7. Grill for another 10 minutes till the cheese turns dark brown as well.
  8. Turn off the grill, take the tray out, and pour/squeeze the lemon juice over it.
  9. Serve and enjoy!
