18. Rice Balls with Veggie filling

A really easy dish to make! I am surprised how many people have actually liked them. They think it’s exotic!

IngredientsQuantity
Any white rice1-2 cups
Carrots1 cup thinly chopped
Cherry Tomato (optional)5-8 pieces chopped to small
Cucumber1 chopped to small
Green capsicum1/2 piece chopped to small
Red capsicum1/2 piece chopped to small
Red cabbage1/4 cup chopped fine
Herbs (coriander/parsley etc)1/4 cup chopped
OlivesFor each rolled rice balls
Corn kernels1/4 cup cooked/thawed
Kalonji seeds or sesame seeds2 tablespoons
If sesame, roast them first to brown
Your favourite oil
(ghee, butter, or olive oil is best)
1-2 tablespoons

Cooking steps

  1. Cook the rice.
  2. Take it away from the heat source and add all the ingredients (except the olives).
  3. Mix them well.
  4. Let the rice cool down completely.
  5. Once cold, take a handful of rice, insert an olive, and roll them into a tight ball. Ensure each ball has an Olive in it.
    (Tip: I have also made this dish with chickpea in each ball, along with the olive/ Roasted cashews is another wonderful insertion!)
