A really easy dish to make! I am surprised how many people have actually liked them. They think it’s exotic!
| Ingredients | Quantity |
| Any white rice | 1-2 cups |
| Carrots | 1 cup thinly chopped |
| Cherry Tomato (optional) | 5-8 pieces chopped to small |
| Cucumber | 1 chopped to small |
| Green capsicum | 1/2 piece chopped to small |
| Red capsicum | 1/2 piece chopped to small |
| Red cabbage | 1/4 cup chopped fine |
| Herbs (coriander/parsley etc) | 1/4 cup chopped |
| Olives | For each rolled rice balls |
| Corn kernels | 1/4 cup cooked/thawed |
| Kalonji seeds or sesame seeds | 2 tablespoons If sesame, roast them first to brown |
| Your favourite oil (ghee, butter, or olive oil is best) | 1-2 tablespoons |
Cooking steps
- Cook the rice.
- Take it away from the heat source and add all the ingredients (except the olives).
- Mix them well.
- Let the rice cool down completely.
- Once cold, take a handful of rice, insert an olive, and roll them into a tight ball. Ensure each ball has an Olive in it.
(Tip: I have also made this dish with chickpea in each ball, along with the olive/ Roasted cashews is another wonderful insertion!)
