When I make pasta of any kind, I make this dish that’s a great accompaniment. In fact, I have used it as a pizza topping as well, and it’s so good. Takes about 10 mins to make it.
Ingredients
| ITEMS | QUANTITY |
| Zucchini (diced) | 1 |
| Eggplant (diced) | 1 |
| Capsicum (diced) | 1 |
| Olives | 1/2 cup |
| Tomato (diced) | 1 cup |
| Italian spice mix (oregano, thyme, etc) | 1 teaspoon |
| Olive Oil | 1 tablespoon |
| Salt | 1/2 teaspoon |
| Organic sugar | 1/2 teaspoon |
METHOD
- Heat the olive oil.
- Add all the diced vegetables except tomato
- Stir well and cook for 5 minutes.
- Add the Italian spice mix, salt and sugar. Mix well, and cook for 1 minute.
- Add the diced tomatoes. Mix well, and continue to cook for another 5 minutes.
- SERVE with your pasta!
