30. Cauliflower and Tofu in Cream Curry

Just cooked up a random curry and it turned out pretty good! Takes about 10 mins to make. Here it is :0

INGREDIENTS

ITEMQUANTITY
Eggplant1, diced
Cauliflower1, separate it to small florets
Capsicum1, diced
Green Peas1 cup
Tomato puree1/2 cup
Firm Tofu1 packet, diced
Milk Cream (coconut cream)1/2 cup
Spices (Garam Masala, Turmeric, Coriander & Cumin powder, Hing)1/2 teaspoon
SaltTo taste
Sugar1/2 teaspoon
Oil3-5 tablespoons
Water1/4 cup

METHOD

  1. Heat oil.
  2. Add all veggies except tomatoes and peas, along with tofu.
  3. Cook/fry in medium heat till they become tender.
  4. Add the various spices and salt. Mix well.
  5. Add the tomato puree, peas and water. Mix well.
  6. Cover and cook for about 5 mins.
  7. Add cream and sugar. Mix well.
  8. Serve with rice or roti.

You can add coriander leaves and lemon juice as well at the end, if you have them.
